The moment people put food in their mouths everything changes and they start to think that they have done their duty regarding nutrition, and that the process of digestion is automatic and completely beyond their control and therefore no need for concern. This thought of course is a huge mistake. As a chef please allow me to tell you to eat properly, you need to understand a little something about the digestive process.

Let me begin by explaining a few key points I think you should know right from the beginning. First the alimentary canal is a fascinating, miraculous mechanism, which can deal simultaneously with different foods, subjecting them to various and sometimes very opposing processes.

Secondly, the digestive system quite frankly and sincerely is all about your mouth, oesophagus, stomach, duodenum, small intestine and colon. Each of these gets their help and support from the salivary glands, pancreas, liver and gall bladder. Now here’s a simple break down of each one of them and how it works. Let’s begin with your mouth.

YOUR MOUTH

While I’m sure you thought the mouth s mostly for tonsil hockey, permit me to redirect your thoughts for a moment by conveying a simple truth about the digestive process. It begins in the mouth and okay I agree and I admit there are other uses for the mouth, but let’s stick with my focus of the digestive process. As you chew your food, it gets mixed with saliva, which is secreted by the salivary glands. Your saliva softens your food and makes it easy for you to swallow, and it also initiates the breakdown of starches into dextrin. Why? Because saliva contains a starch-digesting enzyme called ptyalin. But when you eat starchy foods such as bread, potatoes and rice swallowing in a hurry, the enzyme does not have enough time to convert starch to dextrin, and therefore descends to the stomach unchanged.

This of course interferes with the efficiency of your stomach, which by the way does not contain starch-splitting enzymes, and can cause fermentation along with flatulence. Remember starch is not acted upon again until it reaches your small intestine. Also cellulose which is found in vegetables must be broken down by thorough chewing. Why? Because there is no enzyme that acts on it. Remember if cellulose is not broken down in your mouth, instead of benefiting elimination, it will producer gas, putrefaction and bloating. To complete efficient digestion food must be masticated thoroughly. Now let’s review …

YOUR STOMACH

Of course from you mouth, your food goes down the esophagus to your stomach. Your esophagus is a thin tube which pushes food down by rhythmic, motions known as peristalsis. These peristaltic motions continues throughout the digestive tract, and are controlled by the autonomic nervous system, and is affected indirectly by the condition of your central nervous system alone with stress, or a lack there of. Peace and the ability to maintain peace of mind is important to proper digestion, because enzymatic secretions of the intestines are influenced by mood. Remember earlier when I mentioned indigestion and flatulence? I’m sure if you’re one of the millions of people with acid reflux eating in a relaxed, pleasant and unhurried atmosphere, chewing everything thoroughly is near to impossible. Trust me I know what I’m talking about as I was one, who praised God for that little purple pill a few years ago, and now today I’m completely rid of it, and attempting to help you accomplish the same, should you need to do so. And just in case you haven’t heard, a recent discovery by a group of expert dieticians correlated tension, worry and apprehension with indigestion, heartburn and stomach pains. Now tell me something, if you have heartburn and or Acid Reflux would not you agree with this? I’d be willingly to bet the answer is a big fat yes.

YOUR SMALL INTESTINE

Your small intestine is a very coiled tube with a total length of about 22. 5 feet (6. 5 meters). It extends from the stomach exit (pyloric valve) to the entry of the colon. The first 10 inches (25 cm) of the small intestine is called the duodenum. Its job is to receive pancreatic juice from the pancreas and bile from the gallbladder. Bile by the way emulsifies fats and provides the alkaline medium necessary for pancreatic juice to function. In addition, the intestine itself secretes enzymes (sucrose and lactase) which metabolize sugar and milk sugar. All of these juices have the ability to break down various types of foods so that they can be absorbed into the body through the intestinal linings. It’s most important that the flora in the small intestine is kept in a healthy, flourishing state.

YOUR LIVER

Your liver is the largest gland in your body, and it’s located in the upper right portion of your abdomen. It weighs 3. 3 pounds (1. 5 kg) and comprises two lobes. It receives blood supply from both the hepatic artery and portal vein, which also provides it with huge amounts of the oxygen it needs for the many tasks it must perform. One of the chief functions if the liver is the production, of bile, which as mentioned before is either stored in the gallbladder or enters the duodenum directly to help emulsify fats. You cannot digest fatty foods without bile, and that leads me to another very important point regarding your liver, which is inadequate fiber. If you are like most Americans, you eat only about 10 to 20 grams of fiber a day when most experts believe that 20 to 35 grams are ideal for long-term health. Among fibers healthful benefits is its role in moving toxins out o your body. Insoluble fibers, from flaxseed for example, absorbs water in your digestive tract this speeds up transit time (the time it takes materials to move through your intestine) to move waste products out of your body.

Without adequate fiber, up to 90 percent of cholesterol and bile acids will be reabsorbed and recirculated to the liver. This taxes your liver and reduces its fat burning abilities. No matter what the cause, a sluggish, overworked liver does a poor job metabolizing fat, and you gain weight. So to help you change all that I recommend this simple little plan which is very effective. Start with a cranberry juice – water mixture and psyllium or flaxseed as a potent source of phytonutrients such as anthocyanins, catechism, luteins, and quercetin. These powerful phytonutrients act as antioxidants, providing nutritional support and cofactors for the liver’s cytochrome p-450 phase I and phase II detoxification pathways. You will also find that these nutrients also seem to digest fatty globules in the lymph. The above cocktail fiber blocks the absorption of fat, increases fat excretion, and binds toxins so that they are not reabsorbed into your body. Another simple cocktail which is excellent is lemon and hot water. This mixture also benefits bile formation, which is essential for optimal fat metabolism and helps regenerate the liver. It also promotes peristalsis, the movement in the bowels that keeps waste moving along the digestive tract and out of the body for elimination. Again cranberry juice-water mixture and plain water will assist your liver in diluting and expelling the increased body wastes from the two-phase detoxification process. Water helps empty stubborn fat stores because our liver is more efficient at using stored fat for energy when your body is well hydrated. Remember earlier I mentioned flaxseed oil? Well by including flaxseed oil, the process will take advantage of its metabolism-raising action and its ability to attract and bind to the oil-soluble poisons that lodge fatty acids in flaxseed oil also stimulate bile production, which is crucial to the breakdown of fats.

For another key point, take into consideration eggs which are the highest dietary source of several sulfur-based amino acids, including taurine, oysteine, and methionine. These are needed by the liver to regulate bile production. This nutrient-rich food is also a superb source of phosphatidylcholine, a nutrient needed for over all liver health and to make lecithin, which helps prevent cholesterol oxidation harmful to the liver and other organs.

If you’re worried about eggs and heart disease, take note: a dietary analysis published in JAMA (Journal of the American Medical Association in 1999 followed nearly 40,000 men and 80,000 women over a period of eight to fourteen years. The study found no evidence of any association between egg consumption and the risk of coronary heart disease or stroke in healthy men or women, so enjoy up to two eggs a day. And for my final tip on your liver, broccoli, brussels sprouts, and Kale are very high in sulforaphane, a substance your liver uses in converting toxins into nontoxic waste for elimination.

YOUR COLON

The digestive process is concluded in the colon. The colon, or large intestine, which is larger in diameter than the small intestine, receives the food after digestion and prepares it for elimination. The colon adsorbs water from the fluid mass which arrives from the small intestines and converts it to semi-solid faeces. Eliminated faeces contain the unabsorbed parts of foods such as cellulose, inorganic matter, toxic substances and dead bacteria, and the residues of digestive secretions. Gases and the waste products of protein metabolism are responsible for the typical odor. Note: A high fiber diet and healthy intestinal flora can prevent the offensive putrefactive odor of faeces, and speed up the digestive process.

THE ASSIMILATION PROCESS

Assimilation is the final stage of food utilization. Food factors are assimilated (become part of the body) in the cells, where they are used for maintenance, repair, new growth and energy. Check your food before you eat! Is it fit to become a part of you? Is it natural, wholesome and nutritious, or refined, processed and denatured. One thing is for certain if you have a sensitive stomach it won’t be hard and or long before you know about it. Having said that, please allow me to offer to you the 10 Tips for Sensitive Stomachs.

Top 10 Tips for Sensitive Stomachs

1. Oranges, grapefruits, melons, bananas and potatoes are best eaten separately, as a small meal all on their own, simply because of their special structure. However eating melons and cantaloupe at the same meal can, cause severe indigestion.

2. Cooked animal proteins and vegetables , or cooked starches with vegetables, are easy on sensitive stomachs.

3. When sugar and protein are combined together, they form waste enzymes which will rot the protein in your stomach and inhibit its metabolism.

4. Cheese and fruit combinations are fine ONLY if you combine some sour fruits in the mix, for example limes, lemons grapefruit and oranges.

5. Pineapple and papaya can be combined with lean animal protein (cheese, chicken, fish) because pineapple contains bromelain and papaya contains papain, two powerful protein-digesting enzymes.

6. Fruits and vegetables are not compatible at the same time and at the same meal.

7. Drinking right after your meal, or two hours later, will dilute your digestive juices and can impair your digestion, which can cause stomach pains and heartburn. During your meals, soup and milk are the least troublesome beverages.

8. Fruits (not acid fruits) are best eaten alone because they are highly alkaline.

9. Hot condiments, such as chili, paprika and even mustard, increase gastric juice secretions, irritate the stomach lining and can lead to ulcers.

10. In general, grains combine very well with dried and fresh vegetables and fruits.

While the above ten tips are very important, its also really important to understand a few additional factors which can and will contribute to your sensitive stomach one way or another. That being said, please also bear in mind the following.

1. Starches require an alkaline medium, which is supplied partly by your mouth and by your intestines. Fats and oils will be digested slowly, mostly in your intestines, and do not interfere much with either protein or starch digestion.

2. You’ll find that sugars are the quickest food to digest; some are even absorbed in your stomach, while most will be absorbed through the intestines.

3. This is good news which simply means that proteins and fats, or starches and fats may be eaten together, as their digestion does not interfere with each other.

4. Proteins and starches are a poor food combination because proteins need an acid medium and starches an alkaline one. These digestive processes are chemically opposed, so when they are eaten together, they stress your system by producing fermentation, flatulence and indigestion.

5. If you’re a young and healthy person with a strong digestion and plenty of stomach acid, you’ll not be affected by protein-starch combinations. However, if you’re an older person or someone with a weak digestion, it will be normal for you to easily develop indigestion, particularly if food is not thoroughly chewed.

6. If you’re like me and you really enjoy a great hamburger with fries, you should be warned. While these two combinations include protein and starch, the potatoes ferment in your stomach and stress it, while waiting for the steak to be digested.

Its really important to remember that correct food combinations are regarded by many nutritionists and chefs as the simplest, most effective way to prevent such common problems as stomach acidity, heartburn, bloating, dyspepsia, headaches, allergies and nervousness. Also people with an extremely sensitive digestion may find the common practice of combining high sugar foods with protein distressing. When you eat a sweet dessert after a juicy steak, for example, the sugar is held up in the stomach until the steak has been digested. In the meantime, for 3 to 5 hours the sugars ferment and bloat, causing indigestion and heartburn. Sugary desserts are best avoided.

How to Avoid Energy Audit Disasters: A Guide to Picking a Quality Energy Auditor John Avina, CEM, CMVP Abraxas Energy Consulting
There are a few problems that work against you when trying to find a company to perform a good energy audit for you.

In this paper, I am going to cover these problems and then tell you how to select a quality energy auditor and not get ripped off.
Everybody and their Brother Now Claims to do Energy Audits
With the struggles of the economy in the United States, everyone who is not making money is looking around to see what sectors are still making money. Energy consulting has done well so far. The energy consulting companies are not laying off people, rather, they are hiring. And with the focus on cost-cutting, companies are starting to realize that utilities are not a fixed cost, but actually, a cost that can be reduced by 10% to 30%. Throw in the promise of stimulus funds, and you have a new service offering for companies that are seeing their sales plummet. We are seeing real estate management companies, real estate brokers, electrical and mechanical contractors, and equipment sellers all trying to sell and perform energy audits. On top of that, now some of the very large companies have entered the market. And then there are the legions of unemployed who are constantly calling us asking us to teach them how to become energy auditors. There is a good and a bad to the rush into energy consulting. The good is that with more competitors, costs go down. The bad is that the with decreased costs the quality of the work suffers as well. Companies new to auditing often don’t have experienced auditors and produce poor quality audits Often these contractors and real estate companies don’t even do the audits themselves, but contract them out to others. They are just taking a cut off the top.
Every Company has a Different Idea of What an Energy Audit is
Energy Audit was a term that just had too many meanings. Two different companies could theoretically perform an energy audit, and one could spend 5 hours, and the other 80 hours. With this type of variation in audits, the customer and the auditor often had different ideas in mind on just what was to be done.
The American Society of Heating Refrigeration and Air Conditioning Engineers (ASHRAE) has taken important steps to clarify just what should comprise an audit. ASHRAE has defined the requirements for 3 levels of audits, entitled ASHRAE Level 1, ASHRAE Level 2 and ASHRAE Level 3 audits. Because of this, a customer can ask for a Level 1 audit, and all the vendors should be able to deliver the same level and quality of report. Unfortunately, this is still not true.
Recently we placed a bid for $4,500 for an ASHRAE Level 1 Energy Audit, and were beat by the competition that did the audit for $823. We typically spend about 40 to 50 hours on an ASHRAE Level 1 audit. Assuming our competitor spent 40 hours, and charged $823, that comes to charging $20/hr for the work, which you know they didn’t do. We figured that either: the auditor that won the job is not delivering much, the auditor is using the audit to sell products and services, or the auditor is being paid very little.
Fortunately, we got to see the $823 audit once it was completed. The auditor didn’t deliver much. It was 3 pages, and a handful of ASHRAE forms filled out. Although it was sold as an ASHRAE Level 1 audit, it wasn’t. The audit did not address most of the ASHRAE Level 1 requirements. Customers just don’t know what comprises an ASHRAE Level 1 audit. That is the problem.
You Get What You Pay For
Think about it, you do get what you pay for. Right now in San Luis Obispo California, plumbers are going for $100/hr or more. Energy auditors, with the same amount of experience, but also, who have studied energy in school (most are mechanical engineering graduates), and have learned a highly technical field should be charging more than your local plumber or electrician. When you get a quote for an audit, just divide it by $100/hr, and you will get a ballpark number of hours they expect to spend on the job. Experienced, credentialed energy auditors in the US are commanding about $100,000/year right now. Good auditors are expensive, but so are good plumbers. You get what you pay for.
Why Some Companies Offer Free or Nearly Free Audits
Some companies will offer energy audits for free, or nearly free. When this is done, usually the company offering the audit is trying to sell an “energy saving” device, or perhaps wants to do the installation on the energy efficient measures once they are found. I have no problem with the second type of vendor, as their audits may be good, but often the first type of vendor is typically not providing a comprehensive energy audit, but only an audit that focuses around their product. What is important for the customer is that these limited scope audits are going to miss some real energy savings opportunities due to the auditor’s narrow focus.
There are also well-meaning nonprofits who will perform audits for free. These audits are often very cursory, and are not performed by experienced auditors. Often these nonprofits will get a grant to save energy. The grants are usually not for very much money, and as a result, they cannot hire experienced energy auditing staff. The result is poor work.
Finally, some utilities are now performing energy audits for free. In some cases, this can be a tremendous opportunity. In California, for example, for the investor owned electric utilities hire experienced professional energy consultants to do the work. The audit is free to the customer, but the utility is paying the going price for the audit. They get good audits. On the other hand, some utilities will use their own staff to perform the audits, and sometimes their auditing staff doesn’t have the experience to perform satisfactory work.
Experience Really Counts with Energy Audits
Energy auditing is not just finding inefficient lighting fixtures and suggesting they be replaced with more efficient fixtures. This is, indeed, part of the job, but this is the easy part. Auditing requires a thorough understanding of chillers, boilers, air handlers, package units, control systems and their components, not to mention compressed air and domestic hot water.
You see, energy audits of commercial buildings are not something you can learn in a week. It takes years of learning, making mistakes, and watching others make mistakes before you can become adept at energy auditing. There are an infinite number of HVAC configurations possible. Experienced auditors uncover these new situations every year.
The problem with inexperienced auditors is that they are more likely to miss energy conservation opportunities, or they may make suggestions that just don’t work, or some that may result in damage to your equipment.
How to Select a Good Energy Auditor
So when you select an auditor, it is very important you go with someone, or a company that has years of experience. I would suggest 10 years at the least. The way to ensure that you are getting a quality audit is to ask for the resume of who is going to perform the audit, and get some references. The auditor should be a Professional Engineer (PE) and/or a Certified Energy Manager (CEM). If they are not, then you are taking a big chance. Also the auditor should have at least 10 years under their belt. You don’t want them learning the trade on your job. Also, get a sample audit or two. You should know what you are paying for. With sample audits in hand, then you can make sense of the different prices you get from potential energy auditors. Finally, please ask for references, and call them. Find out if your auditors were professional, met their deadlines, and provided quality work.
When you are evaluating companies:
Talk to 2 or 3 companies and select the best one.
Ask for Resumes of who will actually be onsite. Ensure that the lead auditor has 10 years of experience or more. Also be sure that they have at least 10 years of experience doing energy audits. A lot of times you will get resumes of their best people, and they will send their junior level people onsite. Make sure you get resumes of who will actually be doing the work.
Ask for sample energy audits from the company. Since all of your potential vendors are going to be producing audits of differing quality, you can now judge and rank the companies on the deliverable. Also you can now weed out the companies that are not providing quality analysis.
Ask for References of some jobs they have done recently. You don’t have to call them. First make sure that the references are for energy auditing jobs, and not some other task. If you do plan on calling them, find out if they finished work on schedule, whether the reports were accurate, and whether the reports met expectations. 1
This is what government typically does, although they sometimes put out Requests for Proposals (RFPs) that are so demanding that they require the energy auditing companies to work for days just to get a shot at the job. I would suggest, if at all possible, avoid using a detailed RFP process as the best auditors may also be the most busy, and might not have the time to spend putting together an RFP response.
These suggestions I have given should apply to buildings over 100,000 SQFT. If you are considering audits of small facilities, such as 20,000 SQFT, the work and costs involved are not that great and taking so much care to select the best auditing company is probably overkill. Still, don’t select an auditing company based solely on price, or you will be sorry.
1A colleague of mine warned me on the reference issue. Suppose you had an energy audit done. How many calls are you going to want to take to give a good recommendation? We don’t want to burden our customers with having to give references for the next year or two. He’s right. Please be judicious on the calls to spare our past clients too much interruption.

Never forget to follow the leader of your instincts. If you feel bad, then probably. However, do not spend the rest of your life sitting on the fence waiting for the perfect opportunity for low risk. I get this regular exam to guarantee my safe return from attending scout camp with my boys. I know this a pathetic excuse for staying fit, but I really look forward to summer camp and the great outdoors. Getting a clean bill of health is my ticket to fun in the sun (and rain) while enjoying the time with my sons. While I was waiting in the examination room for my doctor, two thoughts popped into my head: First, why is it the gown they give you never really covers all of the important parts? And, more importantly, what are the symptoms of Slow Sales Syndrome? It reminded me of when the doctor asked about my the last tetanus shot, and I gave him a puzzled look. I scratched my head and thought “When Did I have my last tetanus shot?”, and then, “When Did I last check on my sales goals?”Often, I get so busy selling and serving my customers, I think to myself, “I must be hitting my sales goals!” Not realizing until later, all I’m doing is keeping busy instead of closing new business. Just then, the doctor came into my exam room and started my physical. As he listened to my heart and lungs, I took a deep breath and wondered; how healthy are my sales? After poking and prodding me in all of the right places, he started to ask me questions about my health related habits. You know the routine, how much am I (overdoing it) eating, drinking, exercising, etc. He finished up with some questions that I can’t repeat here. But, it got me thinking again. If I were to examine my sales related habits, what kind of questions do I need to ask myself? Luckily, my favorite MD provided me with all of the questions I needed. I adapted these from the check-up form he used on me. Early signs of Slow Sales Syndrome Do I feel as though I’m working harder but closing fewer sales?Do I constantly get distracted by non-sales-related activities during the day? Do I feel unhappy with my job or career, but I’m not sure why?Have I failed to reach an important sales goal, but was not really concerned about it?Have I wondered whether my customers are getting less than my best effort daily?Am I as motivated as I used to be in reaching out to new prospects?
If I answered yes to more than half of the above questions, there is a very good chance that I am suffering from at least the early stages of Slow Sales Syndrome. Luckily, with all of the new technology available to sales professionals today, we can address and resolve these issues quickly. But what if I answered yes to more than half of the statements? Left unchecked, Slow Sales Syndrome can turn into Sales Burnout. What happens if I don’t treat Slow Sales Syndrome promptly? A sales professional’s job by nature is demanding, both physically and mentally. Over time, the act of selling may wear down an individual’s energy level and stamina, leaving us vulnerable to a common sales pitfall. If untreated Slow Sales Syndrome may progress into Sales Burnout. Dr. Joni Johnston notes that many sales professionals that develop Sales Burnout show these common early warning signs. Money becomes more important than the customer does. Salespeople know that if they care more about the commission than about helping their client make a wise decision, they’ll lose the sale. Putting money before people marks the beginning of burnout and usually the eventual decline of gross sales and commissions. They misrepresent the product. People experiencing burnout sometimes resort to telling “white lies” out of their stress of losing a sale. They fall back on these techniques out of frustration, because they have not kept their professional selling skills sharp! They rush the sales process. They quit taking the time to establish rapport or thoroughly answer objections. Salespeople experiencing burnout view selling as a three-step process, Step 1. “Get the commission!” Step 2. “Get the commission!” Step 3. “Get the commission!” They resist new learning. They’ve heard it all before. Yet, the fact is, they have forgotten their basic sales skills or are refusing to practice them. They make excuses for their underperformance. Salespeople facing burnout often feel their product is defective and overpriced. They may feel that their company doesn’t advertise enough or management isn’t “in tune” with the market or the economy is awful. They may blame these factors and more for their declining sales. They refuse to acknowledge or take any responsibility for their own shortcomings. Not only do they possess a negative attitude, they encourage others to discuss the shortcomings of the sales manager, the product or other salespeople. To prevent this “Simply taking control of your own day, your own work cycle, and your own career” New York-based sales consultant Stephan Shiffman, author of Beat Sales Burnout, writes that one of the best prescriptions for early signs of Sales Burnout is “simply taking control of your own day, your own work cycle, and your own career. ” “For sales professionals,” he explains, “one of the most rewarding, burnout-busting strategic changes of all is simply to change the model. Over the years, I have found some simple tips helpful in heading off Sales Burnout before it sets in. Understand what you’re feeling and why – If you feel anxious or hesitant during a sales call, realize that fear may be the cause for your apprehension. Identify the issue causing the fear, and you will be able to deal with it much easier. Practice makes perfect – To get and keep your confidence high, practice your presentation, role-play with others, or just use a mirror. By doing this, even once, you will feel more prepared and be more relaxed. Seek outside help – Find someone you trust to talk about your sales challenges with. Sometimes an objective, non-judgmental view will give you the insight that you are looking for. Occasionally, we all need a little outside inspiration to reach our potential and dreams. Dream it, achieve it – Picture a sales situation that is uncomfortable in your mind. Before the event, prepare your answers, your attitude, and yourself mentally. By visualizing the desired outcome it will help establish new neuropathways in your brain that can become self-fulfilling. Stop and breathe – Most of us breathe unconsciously, however, taking the time to breathe slowly and deeply will help control your apprehension in challenging situations. Taking a slow, deep breathe will help you focus and calm your mind. Prevention is better than the cureMy doctor reminds me at every check-up that I can live a long and happy life by making some small changes in my life. He helps me stay physically fit and mentally at ease with annual check-ups. He’s always been right on target with me. His advice is sound and reasonable.
